This tempura mussels recipe would make a great addition to your other tempura recipes.
Makes 4 servings
1 Lb. mussel meat (thawed)
3 cups tempura flour (1 cup reserved)
Ice cold water
Vegetable oil for frying
To make the tempura batter place 2 cups of the tempura flour and add enough iced water to make a thin batter. Do not over mix. It is ok to have a few lumps in the batter.
Heat a fryer or a pan of vegetable oil.
Dry the mussel meat with paper towels.
Work in batches. Coat 8-10 mussels in the reserved cup of tempura flour and gently knock off excess flour. Dredge the mussels in the tempura batter allowing excess to fall off into the bowl of batter.
Fry for one to two minutes turning the mussels to evenly cook on both sides and place on paper towel to drain.
Serve with tempura vegetables.
Serve with other tempura seafood.
