Looking for a new, easy to prepare, starter recipe this is it. Chop a few vegetables, add some shrimp, lemon juice, vinegar, olive oil and salt and pepper and you are done. Great for dinner of lunch.
Ingredients:
1 lb. Seatech Chilean Shrimp Meat
1/2 medium fennel bulb, thinly sliced
2 tablespoons fennel fronds
1/2 medium sweet onion, diced
2 garlic cloves, thinly sliced
2 mini sweet peppers, sliced in thin rounds seeds removed
1/2 jalapeño, thinly sliced, seeded and membrane removed
1/2 cup fresh lemon juice
1/4 cup apple cider vinegar
1/4 cup extra-virgin olive oil
Kosher salt and fresh ground pepper to taste
Directions:
Combine shrimp, fennel, fronds, onion, peppers, lemon juice, vinegar and olive oil in a non reactive bowl and gently toss. Season with salt and pepper to tasted. Refrigerate for at least 20 minutes before serving. May be prepared two days ahead and kept covered in the refrigerator.
Serving Suggestions:
Serve with sliced baguette with mayonnaise
Serve with endive leaves
Add to a green salad with vinaigrette dressing
Serves 8 as a starter
