This Mexican Mussel Salad is not only delicious and easy to prepare it is healthy as well. Mussels are high in protein, low in carbohydrates, contain Vitamin A, Selenium, Vitamin B12, Omega 3 Fatty Acids and a number of other minerals. They are a great heart healthy addition to your diet.

 

Makes 4 starter servings

 

Ingredients:

 

1/2 pound Seatech mussel meat

1 red bell pepper, diced

1/2 bunch cilantro, chopped

1 small to medium jalapeño pepper, seeded and diced

I can corn, drained

1 can black beans, drained and rinsed

1-1/2 table spoons Canola oil

juice from one lime

 

Directions:

 

Place first six ingredients in a mixing bowl. Add Canola oil and fresh squeezed lime juice and gently mix until everything is coated with the canola oil and lime juice.

 

Serving Suggestions:

 

Serve with tortilla chips.
