This Greek salad recipe is easy to prepare and the Chilean shrimp meat tastes so good in it that you will never go back to plain Greek salads again.
Ingredients:
Salad:
1 lb. Seatech Chilean shrimp meat
6 cups romaine lettuce, chopped
1/2 red onion, thinly sliced
1 cucumber, peeled, cut in half length wise and cut into 1/4 inch half rounds
3 roma tomatoes, chopped
8 oz pitted kalamata olives
4 oz crumbled feta cheese
Dressing:
2 tablespoons red wine vinegar
2 tablespoons freshly squeezed lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 cup olive oil
1 ounce crumbled feta cheese
salt and pepper to taste
Directions:
Place all the ingredients for the salad dressing in a 16 oz. container with a lid and shake well to blend thoroughly.
Place the chopped lettuce and red onion in a large bowl, add about half the dressing and toss to coat evenly. Divide the lettuce among four plates. Divide the cucumber, roma tomatoes and olives among the four salads. Top the salads with the shrimp and sprinkle with the feta cheese. Place the remaining salad dressing in a serving container and serve the salads.
