This is a great mussel recipe from New Zealand. It is easy to put together and quite tasty.
Ingredients:
½ Lb. cooked Seatech mussel meat, chopped
1 egg
1 Tbsp. flour
¼ tsp baking soda
salt and pepper to taste
2 Tbsp. parsley, chopped
1 green onion (scallion), finely sliced
oil or butter for shallow frying
lemon wedges, to serve
Directions:
In a medium bowl, whisk together the egg, flour, baking soda, salt and pepper to taste, then the green onion and parsley.
Stir in chopped mussels and mix well. It is best to place the mixture in the refrigerator for an hour.
Heat the oil in a large frying pan to medium-high and fry large tablespoons of the mixture until golden brown, then turn over and repeat.
Drain on paper towels and serve with lemon wedge.
Serving Suggestions:
Serve with tarter sauce.
Serve on toast corners with mayonnaise.
