With Trader Joe's Thai Green Curry Simmer Sauce this Green Curry Mussels recipe is a snap to make. It is a nice change to the tradition chicken, beef or pork. You can always use curry paste mixed with coconut milk as directed for your curry sauce if you do not have a Trader Joe's near you.
Makes 4 servings
Ingredients:
1/2 pound cooked Seatech mussel meat
1-2 jars Trader Joe's Thai Green Curry Simmer Sauce
1 bunch baby bok choy, chopped into one inch pieces
2 carrots, peeled and sliced thin on a diagonal
1/2 sweet onion, peeled and chopped into large pieces
1/2 red bell pepper, seeded and diced
1/2 bunch of Thai basil, stems removed
vegetable oil for cooking
basmati rice to serve with the curry
Directions:
Heat a large fry pan or wok on medium high heat and add enough vegetable oil to saute the vegetables in. When the oil begins to shimmer add the vegetables and saute until they just begin to soften. Pour in the Thai green curry Simmer Sauce, thai basil and mussel meat cooking until heated through. Immediately serve with rice.
Serving Suggestions:
Serve with Thai ice tea.
