The natural sweet briny flavor of Chilean shrimp meat goes perfectly with this stuffed avocado recipe. It is a great starter for lunch or dinner.
1/2 Lb. Seatech Chilean shrimp meat
2 large avocados, sliced in half pit and skin removed
1 stalk of celery, diced
1/2 red onion, diced
1 Tbsp parsley, minced
1 lemon, juiced
2 Tbsp mayonnaise or more if desired
salt and pepper to taste
Place the shrimp, celery, onion parsley, lemon juice and mayonnaise into a mixing bowl and gently blend together. Place into the refrigerator to chill. Cut avocados in half, remove the pits, peel and off the skin. Place each avocado half on a salad plate. Divide the shrimp salad mixture on top of the avocados and serve immediately.
Add some crab meat
Use cocktail sauce instead of mayonnaise
Sever with a nice crusty bread
