Chilean Shrimp Louie

A Hearty Delicious Shrimp Salad

In this great classic Louie recipe, Chilean shrimp meat is the star of the show. The sweet briny flavor and firm yet tender texture as well as the amazing coloring make for the best cold water shrimp on the market. You will fall in love with this shrimp and want to use it in all your other recipes the require shrimp.

 

Ingredients:

 

Salad:

 

1 Lb. Seatech Chilean shrimp meat

4 hard boiled eggs, sliced

1 cucumber, peeled and sliced on a bias

4 plum tomatoes, quartered

8 mini sweet peppers, seeded and sliced

6 cups chopped romaine lettuce

1 lemon, cut into wedges

 

Dressing:

 

1 cup mayonnaise

2 Tbsp chili sauce

1 Tbsp ketchup

1 Tbsp sweet pickle relish

1 Tbsp lemon juice

1/2 tsp Worcestershire sauce

1/4 tsp smoke paprika

 

Directions:

 

Place all the salad dressing ingredients in a mixing bowl, blend together and place covered in the refrigerator to chill.

 

Divide lettuce among four plates. Place four wedges of plum tomatoes and four slices of cucumber around the front edge of the place. Place one sliced egg on each plate and divide the sweet peppers among the plates. Place one quarter of the shrimp on top of the lettuce on each plate. Pour salad dressing in four small ramekins or other such containers and serve immediately with lemon wedges.

 

Serving Suggestions:

 

Serve diced avocado

Serve store bought thousand island dressing instead of making Louie dressing.

Serve with black olives

Serve with garlic bread
