Chilean Shrimp Gazpacho

A Delicious Starter Or Meal


This refreshing Chilean shrimp gazpacho recipe makes for a delicious starter or meal. The natural sweet briny flavor and tender yet firm texture of the Chilean shrimp meat are the star of this dish.




1 lb. Seatech Chilean shrimp meat

1 large cucumber, peeled, seeded and chopped

1 28 oz. can diced tomatoes, drained

1/2 large sweet onion, chopped

16 oz. tomato juice

1 8 oz. bottle of clam juice

3 1/2 Tbsp olive oil

4 Tbsp red wine vinegar

3 Tbsp lemon juice

3 Tbsp fresh basil, chopped

salt and pepper to taste




In a large non-reactive bowl mix together the tomato juice, clam juice, tomatoes, onion, olive oil, vinegar, lemon juice, basil and shrimp. Add salt and pepper to taste and chill in the refrigerator for one to two hours before serving.


Serving Suggestions:


Serve with a nice crusty bread

Add diced avocado
